Recipe of the Week: Pollo Asado

This is probably one of our absolute favorite ways to have chicken. It’s tough to get bored of and it’s pretty simple to make. We find it best on the grill, but is still great in a pan when the weather keeps you inside.

4 chicken breasts
12 teaspoon black pepper
14 cup lime juice or 1/4 cup any citrus juice
2 teaspoons ground cumin
2 teaspoons white vinegar
14 cup olive oil
12 cup onion
1 teaspoon sea salt
2 garlic cloves
2 small dried red peppers

Directions:

  • Smash garlic cloves.
  • Place all ingredients except chicken in blender.
  • Pour over chicken breasts.
  • Marinate 2 to 24 hours.
  • Grill chicken breasts.
  • Serve as desired.

We’ve eaten it on a salad, with rice, grilled/steamed veggies, in lettuce wraps. Be creative and enjoy!
